Guntur Dry chicken/Indian Chicken fry

Chicken-1/2 kilo (cut in to medium to small pieces)
Oil-3 tbs
Onions-1 medium
Green chillies-2
Ginger garlic paste-2 tbs
Yogurt-1 tbs
Curry leaves-few
Turmeric powder-1/2 tbs
Garam masala powder-1tbs
Coriander Powder-1 tbs
Red chili powder-1tbs
Curry powder-1 tbs
Salt-to taste
Coriander leaves- 1 small bunch


Heat oil in a pan and add finely chopped onions, green chilies and curry leaves.
Fry until the onions are translucent. Now add ginger garlic paste and sauté until the aroma comes out.
Add chicken pieces, turmeric powder and some salt.
And let it cook on a medium flame covering with a lid.
Cook until the water that comes from the chicken disappears and some oil starts to show up.
Now add curry powder, red chili powder and mix well.
Reduce the flame to low.
Keep the lid on and stir frequently in between  for about 7 minutes.
Finally add garam masala and stir well.
Garnish with coriander.
Chicken fry is ready.


Marinate the chicken pieces with some salt and little ginger garlic paste, little curry powder, little red chili powder and yogurt for at least 20 minutes. (If you are in hurry ...then this marination would be an optional)
